We have various legal jobs in town, though (most) of them can probably make their lives easier by using some illegal methods to make the process faster or make more money out of it.

For example:

Hunting
While there are plenty of animals to hunt out in the wild, there's probably also a pretty penny to be made in the farm animals of others. Plenty of weird people out there to buy the meats. From a factory needing cow or pig meat for cheaper than the farm sells it for or that one weird restaurant on the street selling certain 'authentic multi-cultural dishes' whatever that may mean. Perhaps some legal player-owned businesses can also use these meats to either create their own food cheaper or even make unique dishes.

Though you don't want to get seen doing this or at minimum be prepared to run, since locals don't like seeing innocent things killed or things not yours stolen.

Fishing
Fishing is, from what I heard, not the biggest worthwhile venture. Outside of perhaps having the chance to get lucky while fishing and snatching a briefcase with cash, someone's old wallet or maybe even a memento you can return there are not many ways to improve what you get out of fishing. Though as the saying goes, plenty of fish in the sea and with the purchase of those 'safe to humans' commercial 'fireworks' from one of those companies that surely isn't selling actual explosives, you can get to plenty of fish faster than with a rod. While the safe to humans part of the advert of rings true it wont kill you but probably knock you off your feet. These fireworks are definitely explosive enough to kill a bunch of fish quickly so you can start selling in bulk.

Perhaps this dynamite fishing technique uses pressure-based fuses so they 'only work in water' like depth charges. Though of course if the city's ready this can also be actual dynamite.

Of course, this runs the risk of locals notifying they saw or heard this type of fishing in the area to the cops.

Delivery
Most people aren't home when FedEx or UPS comes around, so why is that the case for GoPostal? delivering boxes instead of simply taking it from your inventory will now place it onto the porch or location of wherever you are dropping it off. This is of course important since not delivering the package at all will get GoPostal to simply put your ID out to officers under suspicion you've been stealing packages on the job but leaving it on the porch means you did your job. But of course, if a friend comes and runs by snatching the package off the porch they might find worthwhile things in there or at minimum something they can pawn off. The delivery guy keeps his job and paycheck while maybe making more, meanwhile cops either get a delayed ping from the customer about a stolen package, or an early one from a passer-by or some 'ring-camera' that some locations might have spotting it.

Tow Truck driving
Someone somewhere always wants a car on the cheap without much damage, perhaps towing the vehicle is an easier means of doing chop-shops with intact vehicles or delivering them to other willing customers.

Garbage truck driving
Dumpster diving might not be appreciated in many places, unless of course, you're only doing your job to get that filth out of the can and onto a dump. Tearing open a trash bag to perhaps find a lucky dead drop of cash, maybe someone accidentally lost a watch or had to ditch their drugs while running. Either way, their trash, mistakes or desperation now got you a reward.
