4th of July bbq. All slow cooked on a pellet smoker at 200F/95ish C.

cut chicken breast/thigh/whatever fucking part of the chicken u want into bite sized (no bigger than ur thumb unless ur thumb's small then a bit bigger) pieces. season the FUCK out of all of it with garlic powder, onion powder, cayenne pepper, sweet/smoked paprika, pepper and really just whatever else u want i used a blend my auntie gave me atop all that
mix equal parts corn starch and all purpose flour, season the fuck out of that with the same thing as the chicken
coat chikmcin bites with egg wash (splash of milk) then coat in LIGHT COAT (light coat) of flour/starch mixture
let rest in mixture for lil bit while u heat up oil in deep frying apparatus
get oil to fuck-off levels of hot (i recommend vegetable or canola oil), deep fry until coating is golden brown, let rest on wire rack for a minute or two to drain oil
serve with whatever the fuck kinda sauce u want (i got sweet bbq sauce and peppery bbq sauce in the dishes)
warning: if u add a lot of cayenne pepper u will put ur tongue through stalingrad
