Any Fallout that has DLCs included, New Vegas is the best if you got DLCs with it. Buy it only on discount, otherwise, you're gonna get expensive.

Stellaris is nice too if you don't have it.

Nah, not the case at all. In fact, there's a Halloween event on right now. It's a very aesthetically pleasing and comfortable game to play. It's still difficult, and you will have to really think about what you do, but so far I've sunk 28 hours into the game and I haven't finished the second chapter yet.

I only play it whenever it's really cold/snowy outside though, so that might be why.

Definitely.

You can get mods that make the Alien AI a lot more unpredictable if you want, although I just settled for the hardest difficulty

Metro exodus 4head. But I would suggest Metro 2033 or Metro Last Light, both great games. Stalker clear sky/shadows of chernobyl.
